Deliciously comforting chicken meatballs made with ricotta cheese, perfect for family dinners or gatherings.

- 1 lb (450g) ground chicken
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- ¼ cup fresh parsley, chopped
- ½ cup breadcrumbs
- 1 tsp dried oregano
- Salt and pepper, to taste
- Olive oil, for frying or baking
Instructions
- In a large bowl, combine the ground chicken, ricotta, Parmesan, egg, minced garlic, chopped parsley, breadcrumbs, dried oregano, salt, and pepper. Mix until just combined.
- Roll the mixture into 1½-inch meatballs and place them on a baking sheet.
- To cook, heat olive oil in a skillet over medium heat, and fry the meatballs until golden brown and cooked through (about 10-12 minutes), or bake at 400°F (200°C) for 20-25 minutes.
- Serve with marinara sauce over pasta, in subs, or as appetizers.
Notes
Keep an eye on cooking times to avoid dryness. These meatballs freeze well for future meals.
