Description

Deliciously comforting chicken meatballs made with ricotta cheese, perfect for family dinners or gatherings.


Ingredients

  • 1 lb (450g) ground chicken
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • ½ cup breadcrumbs
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Olive oil, for frying or baking

Instructions

  1. In a large bowl, combine the ground chicken, ricotta, Parmesan, egg, minced garlic, chopped parsley, breadcrumbs, dried oregano, salt, and pepper. Mix until just combined.
  2. Roll the mixture into 1½-inch meatballs and place them on a baking sheet.
  3. To cook, heat olive oil in a skillet over medium heat, and fry the meatballs until golden brown and cooked through (about 10-12 minutes), or bake at 400°F (200°C) for 20-25 minutes.
  4. Serve with marinara sauce over pasta, in subs, or as appetizers.

Notes

Keep an eye on cooking times to avoid dryness. These meatballs freeze well for future meals.
