Ingredients
  

Chicken Skewers

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

Bang Bang Sauce

  • 1 1/4 cups mayonnaise
  • 2/3 cup Thai sweet chili sauce
  • 2 teaspoons Sriracha, or more to taste
  • 2 tablespoons honey

Preparation

  • In a large mixing bowl, combine the cubed chicken breasts with the olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss everything well to coat the chicken with the spices.
  • Take the soaked wooden skewers and thread 4-5 chicken cubes onto each skewer, packed tightly but not overcrowded.
  • In a separate small bowl, mix the mayonnaise, Thai sweet chili sauce, Sriracha, and honey until well combined.
  • Brush half of the bang bang sauce mixture over the chicken skewers.

Cooking

  • Place the skewers in a single layer in the air fryer basket. Cook at 400°F for about 11-12 minutes, flipping halfway through.
  • Check that the chicken has reached an internal temperature of 165°F.
  • Once cooked, remove the skewers and serve drizzled or brushed with the reserved bang bang sauce.

Notes

For deeper flavor, consider marinating the chicken in the bang bang sauce before cooking. Incorporate vegetables like bell peppers or zucchini onto the skewers for added nutrition. Adjust Sriracha to your taste.
