Instructions
 

Preparation

  • Place chopped dried apricots and shelled pistachios into a food processor.
  • Pulse them together until finely chopped.
  • Add sweetened condensed milk, vanilla extract, and optional ground cardamom. Pulse until combined into a sticky dough.
  • Roll the mixture into small, bite-sized balls and place them on a parchment-lined tray.

Coating

  • Melt the white chocolate until smooth.
  • Dip each truffle into the melted chocolate, allowing excess to drip off.
  • Roll the chocolate-coated truffle in chopped pistachios.

Setting

  • Refrigerate the truffles for at least one hour to allow them to set.
  • Serve chilled and enjoy the combination of sweet apricot, nutty pistachio, and creamy chocolate.
