Instructions
 

Preparation

  • Preheat the oven to 375 degrees F, arranging the top rack 4-6 inches from the broiler and another rack in the middle.
  • In a small bowl, stir together olive oil, dried oregano, red pepper flakes, kosher salt, and black pepper until well combined.
  • In a medium bowl, combine olives, chopped sun-dried or marinated tomatoes, and thinly sliced garlic.
  • Place the feta in the center of a small baking dish, ensuring there's enough space around it for the olives and tomatoes.
  • Spoon the tomato and olive mixture around the feta.
  • Pour the olive oil mixture over everything in the baking dish.

Cooking

  • Bake the feta for 15-18 minutes, or until it starts to brown at the edges.
  • Turn on the broiler for an extra 2-3 minutes to brown the top of the cheese, keeping a close eye to prevent burning.

Serving

  • Sprinkle with chopped fresh herbs before serving warm.
