Instructions
 

Preparation

  • In a large skillet over medium heat, cook 1 lb of ground beef until browned, ensuring to drain any excess fat.
  • Introduce your chopped onion and minced garlic, letting them cook until the onion turns translucent, about 3-4 minutes.
  • Enhance the mixture with chili powder, cumin, paprika, salt, and pepper, cooking for an additional 2 minutes.
  • Set the mixture aside to cool slightly, then fold in 1 cup of shredded cheddar cheese and, if desired, 1/2 cup of refried beans.

Assembly

  • Lay a large flour tortilla flat on your clean surface.
  • Position a generous portion of the beef and cheese filling in the center.
  • Fold in both sides of the tortilla, then roll it up from the bottom to the top.
  • Repeat this process until all your tortillas and filling are used up.

Frying

  • In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat until it shimmers.
  • Carefully add your assembled chimichangas seam-side down.
