Ingredients
  

Meat and Seasoning

  • 1 pound ground beef rich and flavorful
  • 1 small onion, diced for a hint of sweetness and crunch
  • 2 cloves garlic, minced to elevate the aroma
  • 2 teaspoons chili powder for that essential kick
  • 1 teaspoon ground cumin fragrant and earthy
  • 1 teaspoon salt to enhance the flavor
  • 1/2 teaspoon black pepper for warmth

Enchilada Components

  • 2 cups red enchilada sauce tangy and robust
  • 8 pieces corn tortillas soft and pliable
  • 1 can black beans 15 oz, drained and rinsed for extra fiber

Cheese and Garnish

  • 1 1/2 cups shredded cheddar cheese a classic cheesy layer
  • 1 1/2 cups shredded Monterey Jack cheese creamy and melty
  • 1/4 cup fresh cilantro, chopped optional, for garnish

Instructions
 

Preparation

  • Heat a skillet over medium heat. Add the ground beef, cooking until browned; drain excess fat.
  • Add diced onion and minced garlic into the skillet, sautéing until softened.
  • Stir in chili powder, ground cumin, salt, and black pepper. Add one cup of enchilada sauce and simmer for 5 minutes.
  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Assembly

  • Pour a layer of enchilada sauce into the bottom of the baking dish.
  • Layer half of the corn tortillas, followed by half of the beef mixture, a third of the black beans, and both cheeses.
  • Repeat the layering process, ending with a layer of tortillas.
  • Pour the remaining enchilada sauce over the top layer and sprinkle with the remaining cheese.

Cooking

  • Cover casserole with foil and bake for 20 minutes.
  • Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  • Let it rest for about 10 minutes before serving, garnishing with fresh cilantro if desired.

Notes

For a twist, add chopped bell peppers or corn to the beef mixture. Prepare the beef mixture in advance and refrigerate. Consider drizzling lime juice over the top before serving for an added zing.
