For the cheesecake filling

  • 1 1/2 cups creamy cottage cheese Blended until smooth for creaminess
  • 2 tablespoons honey Natural sweetener
  • 1/4 cup Greek yogurt Adds creaminess
  • 2 large eggs Provide binding
  • 1 teaspoon vanilla extract Adds aromatic flavor
  • 1 tablespoon lemon juice Gives brightness
  • 1 tablespoon sugar Additional sweetness for filling

For the berry topping

  • 1 cup fresh mixed berries A mix of strawberries, blueberries, and raspberries
  • 1 tablespoon honey To coat the berries

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand.
  • Press the mixture firmly into the bottom of a springform pan.
  • In a blender, blend together cottage cheese, honey, Greek yogurt, eggs, vanilla extract, lemon juice, and sugar until smooth.
  • Pour the creamy filling over the prepared crust.

Baking

  • Bake in the preheated oven for 45-50 minutes, until the center is set and lightly golden.
  • Remove from the oven and allow to cool at room temperature.

Topping and Chilling

  • In a bowl, mix fresh mixed berries with honey to coat. Spoon over the cooled cheesecake.
  • Chill in the fridge for 2-3 hours before serving.

Ensure cottage cheese is blended until smooth to achieve a creamy texture. Avoid overbaking to prevent dryness.
