For the Crust

  • 1 1/2 cups graham cracker crumbs For a crunchy base

For the Crunch Topping

Instructions
 

For the Crust

  • Preheat the oven to 325°F (165°C).
  • Line the bottom of a 9-inch springform pan with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.
  • Press the crumb mixture evenly into the bottom of the springform pan.
  • Bake for 8-10 minutes until slightly golden. Set aside to cool.

For the Cheesecake Filling

  • In a large bowl, beat the softened cream cheese and granulated sugar together until smooth.
  • Add eggs one by one, mixing well after each addition.
  • Stir in vanilla extract, sour cream, and flour. Fold in pureed strawberries and heavy cream gently.
  • Pour the cheesecake filling into the cooled crust.
  • Bake for 45-50 minutes or until the center is just set.
  • Turn off the oven, crack the door, and let the cheesecake cool for 1 hour before chilling in the fridge for at least 4 hours.

For the Strawberry Crunch Topping

  • In a small bowl, mix crushed freeze-dried strawberries with granola, melted butter, and sugar until well combined.
  • Sprinkle the crunchy topping evenly over the chilled cheesecake before serving.

For the Berry Sauce (Optional)

  • In a small saucepan, combine chopped strawberries, sugar, and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally.

To Serve

  • Slice the cheesecake and drizzle with the berry sauce if desired. Serve immediately.

For best results, ensure cream cheese is at room temperature. Prepare the crust and filling in advance to save time.
