Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the mixture resembles wet sand.
  • Press the crumb mixture firmly into the bottom of a 9-inch springform pan, creating a solid crust.
  • Bake for 10 minutes to set, then let it cool completely.

Cheesecake Filling

  • In a large mixing bowl, beat together the softened cream cheese and sour cream until the mixture is smooth and creamy.
  • Gradually add in the granulated sugar, vanilla extract, and lemon juice. Continue to mix until combined.
  • Introduce the eggs one at a time, mixing well after each addition until fully incorporated.
  • Pour the cheesecake filling over the cooled crust, tapping the pan gently to remove air bubbles.
  • Bake for 50-60 minutes, until the center is set but still slightly jiggly.
  • Allow the cheesecake to cool completely at room temperature before chilling in the refrigerator for at least 4 hours, ideally overnight.

Topping and Serving

  • In a small saucepan, combine the halved cherries and kirsch. Cook over medium heat for about 5-7 minutes until softened, then cool.
  • Whip together the heavy cream and powdered sugar until stiff peaks form.
  • Spread the whipped cream over the cooled cheesecake, drizzle with the cherry mixture, and sprinkle with dark chocolate shavings.
  • Slice, serve, and enjoy!

Notes

Consider adding almond extract along with the vanilla for a flavor twist. Store in the refrigerator for up to five days or freeze for up to a month. You can substitute dark cherries with strawberries or raspberries.
