Ingredients
  

For the Blueberry Layer

  • 400 g frozen blueberries Juicy and flavorful, elevate the dessert.
  • 2 tablespoons lemon juice Adds brightness and zesty tartness.
  • 2 tablespoons sugar Enhances the natural flavors without overpowering them.

For the Biscuit Base

  • 125 g digestive biscuits Provides a delightful crunch.
  • 42 g unsalted butter, melted Binds the biscuit crumbs.

For the Cheesecake Filling

  • 180 g white chocolate Adds a smooth and luxurious texture.
  • 125 ml whipping cream Adds an airy lightness.
  • 250 g low-fat cream cheese, softened The classic creamy texture of cheesecake.
  • 125 ml low-fat sour cream, room temperature Adds tangy flavor and creaminess.
  • 1 teaspoon vanilla extract Enhances flavor.

Instructions
 

Prepare the Blueberry Layer

  • In a medium saucepan, combine frozen blueberries, lemon juice, and sugar over medium heat. Cook for 5-7 minutes until the blueberries have softened and the mixture has thickened slightly. Remove from heat and cool completely.

Make the Biscuit Base

  • Crush the digestive biscuits into fine crumbs. Mix with melted butter and press firmly into the bottom of serving glasses or jars.

Prepare the Cheesecake Filling

  • Melt white chocolate in a microwave-safe bowl. In another bowl, combine softened cream cheese, low-fat sour cream, and vanilla extract; beat until smooth. Fold in the melted white chocolate.

Whip the Cream

  • Whip the cream to soft peaks and gently fold it into the cheesecake mixture.

Assemble the Parfaits

  • In each glass, layer the cheesecake mixture and blueberry layer repeatedly, finishing with a blueberry layer on top.

Chill and Serve

  • Cover the parfaits and refrigerate for at least 2 hours before serving. Optionally, top with extra blueberries or whipped cream.

Notes

For added flavor, sprinkle cinnamon into the biscuit base. Can substitute blueberries with other berries or add vanilla vodka for an adult twist.
