Ingredients
  

For the Cream Cheese Mixture

  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1/4 cup granulated sugar
  • 1 egg white
  • 1/2 teaspoon pure vanilla extract

For the Cake Batter

  • 1 1/4 cups fresh blueberries Can use frozen if thawed and drained.
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 5.5 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 whole egg
  • 1 egg yolk
  • 3/4 cup sour cream
  • 1 teaspoon pure vanilla extract

For the Streusel Topping

  • 1/3 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 3 tablespoons unsalted butter, chilled and diced

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch springform pan and line its bottom with parchment paper.
  • In a mixing bowl, combine the softened cream cheese, 1/4 cup granulated sugar, and 1/2 teaspoon of pure vanilla extract. Blend until creamy and then add the egg white.
  • In a separate bowl, sift together the 1 1/2 cups of all-purpose flour, baking powder, baking soda, and salt.
  • Cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
  • Add the whole egg, egg yolk, and 1 teaspoon of vanilla extract to the creamed mixture, mixing until incorporated.
  • Alternate adding the sifted flour mixture and sour cream to the creamed butter mixture, starting and finishing with the flour. Mix until just combined.
  • Pour the batter into the prepared springform pan and evenly spread it.
  • Distribute 1/3 cup of blueberries over the batter.
  • Spread the cream cheese mixture on top and add the remaining blueberries.
  • For the streusel topping, mix together 1/3 cup granulated sugar, 1/2 cup all-purpose flour, and 3 tablespoons chilled butter until crumbly. Sprinkle it over the cake.
  • Bake for 40-45 minutes, or until a cake tester comes out clean.
  • Allow the cake to cool before removing it from the pan.

Notes

For extra flavor, consider adding a pinch of cinnamon to the streusel topping or using frozen blueberries, ensuring they are thawed and drained. Substitute some flour with whole wheat for a healthier option.
