Ingredients
  

Crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 5 tablespoons 5 tablespoons melted butter
  • 2 tablespoons 2 tablespoons sugar

Cheesecake Filling

  • 24 oz 24 oz cream cheese, softened Use room temperature for best results.
  • 3/4 cup 3/4 cup sugar Adjust for sweetness preference.
  • 3 large 3 large eggs, room temperature
  • 1/2 cup 1/2 cup sour cream Adds tanginess.
  • 1 teaspoon 1 teaspoon vanilla extract Enhances flavor.
  • 1.5 cups 1 1/2 cups fresh blueberries Can substitute with frozen blueberries, thawed and drained.

Crumble Topping

  • 1/2 cup 1/2 cup all-purpose flour
  • 1/4 cup 1/4 cup brown sugar Enhances crumble flavor.
  • 4 tablespoons 4 tablespoons cold butter, cubed For ideal crumble texture.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C) and line a springform pan with parchment paper.
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press this mixture firmly into the bottom of the prepared pan.
  • Bake the crust for about 10 minutes until lightly browned, then set aside to cool.
  • In a separate bowl, beat the softened cream cheese and 3/4 cup sugar together until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the sour cream and vanilla extract until combined.
  • Fold in the fresh blueberries gently.
  • Pour the cheesecake filling over the cooled crust and smooth the top.

Crumble Preparation

  • In a bowl, combine the flour and brown sugar, cutting in the cold butter until the mixture resembles coarse crumbs.
  • Sprinkle the crumble evenly over the cheesecake filling.

Baking

  • Bake in the preheated oven for 50–60 minutes, until the center is set and the crumble is golden brown.
  • Allow to cool completely before refrigerating for at least 4 hours.

Notes

For an extra creamy cheesecake, ensure cream cheese is at room temperature. You can add lemon zest to the filling for a bright flavor, and for best results, consider using an insulated pan or a water bath to prevent cracking.
