Ingredients

For the blueberry swirl

  • 1.5 cups 1 1/2 cups of fresh blueberries Essential for the swirl.

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a medium bowl, mix together the graham cracker crumbs, 1/4 cup of sugar, and melted butter until combined. Press into the bottom of the prepared pan to create a crust.
  • Bake the crust for 8-10 minutes until golden, then set aside to cool.

Prepare the filling

  • In a large bowl, beat together softened cream cheese and 1 cup of sugar until smooth.
  • Add in vanilla extract, then beat in the eggs one by one, mixing well after each.
  • Blend in sour cream and heavy cream until smooth and combined.

Prepare the blueberry swirl

  • In a saucepan over medium heat, combine blueberries, 1/4 cup sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until blueberries burst and form a sauce. Set aside to cool slightly.

Assembly

  • Pour cheesecake filling over the cooled crust, smoothing into an even layer.
  • Drop spoonfuls of blueberry sauce on top and swirl gently into the filling with a knife.

Baking

  • Bake for approximately 50-60 minutes until the center is set but slightly jiggly.
  • Turn off the oven and leave the cheesecake inside for 1 hour to cool slowly.
  • Refrigerate for at least 4 hours or overnight before serving.

Serving

  • Remove cheesecake from the springform pan, slice, and top with extra fresh blueberries before serving.

Notes

Allowing the cheesecake to cool gradually in the oven prevents cracks. Chill it sufficiently for best flavor.
