Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the melted butter and granulated sugar, stirring until well incorporated.
  • Add in the eggs and vanilla extract, mixing until the batter is smooth.
  • In another bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  • Gradually add the dry ingredients to the wet mixture, stirring until everything is beautifully combined.
  • Drop generous portions of the brownie batter onto the prepared baking sheet, allowing about 2 inches between each scoop.

Baking

  • Bake the cookies for 10-12 minutes until the edges are set.
  • Let the cookies cool completely on a wire rack.

Peanut Butter Filling

  • In a separate bowl, mix together the creamy peanut butter, powdered sugar, and a touch of vanilla extract until it’s rich and velvety.
  • Once the brownie cookies are cool, gently flatten each one and spread the peanut butter filling on top.
  • Place another brownie cookie atop the filling to create a sandwich.

Chocolate Coating

  • In a microwave-safe bowl, combine the chocolate chips and coconut oil, heating in 30-second intervals, stirring until smooth.
  • Dip the tops of each cookie sandwich in the chocolate coating and return them to the baking sheet.
  • Allow the chocolate to set before serving.
