Ingredients
  

For the Salmon

  • 4 pieces salmon fillets, plump and fresh
  • 2 tablespoons Cajun seasoning with a kick
  • 1 tablespoon high-quality olive oil, fragrant and smooth

For the Avocado Lime Cream

  • 1 piece ripe avocado, creamy and buttery
  • 1/2 cup Greek yogurt or sour cream, adding richness
  • 1 piece lime, for vibrant juice and zest
  • to taste salt and pepper
  • as needed Fresh cilantro for garnish for added color and freshness

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rub each salmon fillet generously with olive oil, then sprinkle with Cajun seasoning.
  • Place the seasoned fillets on a lined baking sheet in a single layer.

Cooking

  • Bake for 12-15 minutes until the salmon flakes easily with a fork and is opaque throughout.
  • While the salmon is baking, prepare the avocado lime cream by blending avocado, Greek yogurt or sour cream, lime juice, lime zest, salt, and pepper until smooth.
  • Once the salmon is cooked, generously top each fillet with the creamy avocado mixture and garnish with fresh cilantro.

Notes

For added depth, marinate the salmon in olive oil and Cajun seasoning for 30 minutes before cooking. Leftover avocado lime cream goes great on tacos or as a dip.
