Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing the cups.
  • In a large mixing bowl, whisk the eggs together with granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth and creamy.
  • Add the freshly grated carrots, zucchini, and apple to the wet ingredients, stirring well to combine.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Gradually incorporate the dry mixture into the wet ingredients, stirring until just combined.
  • If desired, fold in the chopped walnuts or pecans.
  • Spoon the batter evenly into the muffin tin, filling each cavity about two-thirds full.

Baking

  • Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let them cool in the tin for about five minutes before transferring to a wire rack to cool completely.

Frosting

  • While the muffins cool, prepare the cream cheese frosting by beating the softened cream cheese and butter together until light and fluffy.
  • Gradually add powdered sugar, one-quarter cup at a time, beating until smooth. Stir in additional vanilla extract.
  • Once the muffins have cooled, generously spread the cream cheese frosting over the top of each muffin.

Notes

For added moisture, consider including a spoonful of applesauce in the mix. Store muffins in an airtight container at room temperature for up to three days or in the refrigerator for a week.
