For the Cheesecake Filling

  • 8 oz cream cheese softened for our cheesecake filling
  • 1/4 cup granulated sugar for filling, sweetening the creaminess
  • 1/2 teaspoon vanilla extract for filling, harmonizing flavors

Instructions
 

Prepare the Cheesecake Filling

  • In a small mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Beat the mixture until smooth and creamy.
  • Scoop the mixture into small balls about one teaspoon in size and place them on a parchment-lined tray. Freeze for about 30 minutes.

Make the Cookie Dough

  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add in the eggs, one at a time, along with the vanilla extract, mixing until thoroughly combined.

Mix Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  • Gradually add this dry mixture to the wet ingredients, mixing until just combined.

Add the Mix-Ins

  • Stir in the grated carrots, old-fashioned oats, walnuts (if using), and raisins (if desired) until evenly integrated.

Assemble the Cookies

  • Preheat your oven to 350°F (175°C).
  • Take about 2 tablespoons of the cookie dough, flatten it slightly in your palm, and place a frozen cheesecake ball in the center.
  • Gently wrap the dough around the filling, sealing the edges. Repeat with remaining dough and place cookies on lined baking sheets.

Bake the Cookies

  • Bake the cookies for approximately 13–15 minutes until golden around the edges and slightly underbaked in the center.

Cool and Serve

  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra moisture, consider adding shredded coconut or crushed pineapple. Adjust spices to preference or experiment with different add-ins like cranberries or chocolate chips.
