  • 2 large egg whites room temperature, key for aeration and lift
  • 1/4 tsp cream of tartar optional, for added stability
  • Orange and green food coloring for the carrot design, optional

Filling Ingredients

  • 100 g cream cheese creamy and tangy for the filling
  • 50 g unsalted butter softened, adds richness and moisture
  • 100 g powdered sugar for a sweet, smooth finish
  • 1/2 tsp vanilla extract to infuse warmth and flavor
  • 1/2 tsp cinnamon for a hint of spice
  • 30 g finely grated carrot excess moisture squeezed out, the star ingredient

Instructions
 

Preparation

  • Preheat the oven to 300°F (150°C). Line two baking sheets with parchment paper or silicone baking mats.
  • Sift the almond flour and powdered sugar together into a bowl.
  • In a separate, clean bowl, beat the egg whites on medium speed until soft peaks begin to form.
  • Gradually add the granulated sugar while continuing to beat the egg whites until stiff peaks form.
  • Gently fold the dry ingredients into the egg whites using a spatula.
  • Divide the batter as desired and add food coloring. Pipe small circles onto the prepared baking sheets.
  • Tap the baking sheets on the countertop to release air bubbles. Allow the macarons to rest for 30-60 minutes.
  • Bake in the preheated oven for 15-18 minutes. Once done, let them cool completely.

Filling Preparation

  • Beat together cream cheese and softened butter until smooth.
  • Add powdered sugar, vanilla extract, and cinnamon, mixing well.
  • Gently fold in the grated carrot.

Assembly

  • Once the macaron shells have cooled, pair them up and pipe the filling onto one shell, then sandwich with another shell.
  • For the best flavor, place the assembled macarons in the fridge for at least 24 hours before serving.

Notes

Use room temperature eggs; sifting is key for smooth batter. Be gentle when folding; proper resting time helps prevent cracking.
