Preparation

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Cream the softened butter and granulated sugar together until light and fluffy.
  • Add the egg, vanilla, and almond extracts (if using), and mix until fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until a smooth dough forms.
  • Divide the dough into two portions. Roll out each between two sheets of parchment paper to about 1/4-inch thickness.
  • Use a holly-shaped cookie cutter to cut out the cookies and transfer them to the prepared baking sheets.

Baking
