Cheesy Beef Enchiladas Tortellini

Ingredients
  

Meat and Beans

  • 1 pound ground beef Use lean ground beef for a healthier version.
  • 1 medium onion, diced Yellow or white onions work best.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 can black beans, drained and rinsed Can substitute with kidney beans if desired.
  • 1 can diced tomatoes with green chilies Adds a spicy kick.
  • 1 tablespoon taco seasoning Homemade or store-bought is fine.

Pasta and Cheese

  • 1 package cheese tortellini 9 oz package.
  • 2 cups shredded cheddar cheese Feel free to experiment with different cheeses.

Sauce and Toppings

  • 1 cup enchilada sauce Store bought or homemade.
  • ½ cup sour cream Can substitute with Greek yogurt.
  • 1 tablespoon olive oil For sautéing.

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Sauté the diced onion for 3-4 minutes until translucent.
  • Add minced garlic and sauté for an additional minute.
  • Add ground beef, cooking until browned, about 5-7 minutes. Drain excess fat.
  • Mix in black beans, diced tomatoes, and taco seasoning, simmer for 5 minutes.

Cooking

  • Cook cheese tortellini according to package instructions (around 3-5 minutes). Drain and set aside.
  • Preheat the oven to 350°F (175°C).
  • Combine cooked tortellini with the beef mixture.
  • Spread enchilada sauce on the bottom of a baking dish.
  • Pour tortellini mixture over the sauce, then top with remaining sauce and cheese.
  • Cover with foil and bake for 20 minutes, then uncover and bake for another 10-15 minutes until cheese is melted.

Notes

Add jalapeños or bell peppers for extra crunch. Swap ground beef with turkey or chicken for a lighter meal. Garnish with fresh cilantro before serving.
