  • 2 cups mashed potatoes (preferably leftover) Creamy and rich, these mashed potatoes form the base of the recipe.
  • 1 cup shredded cheddar cheese The star ingredient, adding a delightful sharpness and gooey texture.
  • 1/4 cup grated parmesan cheese Brings a nutty flavor that perfectly complements the cheddar.
  • 1/4 cup sour cream or cream cheese (optional) For an extra layer of creaminess, either option works wonderfully.
  • 1/4 cup chopped green onions or chives Fresh and aromatic, adding a subtle crunch and color.
  • 1 each egg Binding the mixture together to create perfect little puffs.
  • Salt & pepper to taste salt & pepper Essential for enhancing the overall flavor.
  • 1/4 cup breadcrumbs (for coating) Providing the perfect crispy outer layer.
  • 2 tbsp butter, melted Adds richness and helps the puffs crisp up beautifully.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) to ensure even baking.
  • Line a baking sheet with parchment paper to prevent sticking.
  • In a large bowl, combine the mashed potatoes, cheddar cheese, parmesan cheese, sour cream (or cream cheese), green onions (or chives), and the egg. Stir until the mixture is well combined and creamy.
  • Season with salt and pepper to taste.
  • Shape the mixture into small balls or puffs, using about 1-2 tablespoons for each.
  • Place the shaped puffs on the prepared baking sheet, leaving space between them.
  • Roll each puff in breadcrumbs to coat them lightly.
  • Drizzle the melted butter over the top of each puff.

Baking

  • Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  • Serve warm and enjoy!

Notes

For the best results, use cold, leftover mashed potatoes. You can customize by adding mozzarella or spices for different flavors. Don't skip the breadcrumbs for that satisfying crunch!
