Cheesy Vidalia Onion Casserole

Ingredients
  

Casserole Filling

  • 4 large Vidalia onions Provides a sweet flavor.
  • 2 tablespoons unsalted butter For sautéing onions.
  • 3 large eggs Binds the ingredients.
  • 5 oz can of evaporated milk Adds creamy richness.
  • 1 cup crumbled Ritz crackers First portion for filling.
  • 1.5 cups shredded cheddar cheese For rich flavor.
  • 0.5 teaspoon salt Enhances taste.
  • 0.125 teaspoon pepper For seasoning.

Crumb Topping

  • 1 cup crumbled Ritz crackers Second portion for topping.
  • 3 tablespoons melted butter For crunch.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice off the root and stem ends of the Vidalia onions, halve them vertically, and chop them into slivers about 1/4-inch to 1/2-inch thick.
  • Place the slivered onions in a saucepan, cover with water, and bring to a boil. Reduce heat and simmer for about 8 minutes, then drain.
  • In a bowl, toss the warm onions with two tablespoons of butter.

Mixing & Baking

  • In a separate bowl, beat the eggs and evaporated milk, then add the cooked onions, one cup of crumbled Ritz crackers, shredded cheese, salt, and pepper. Mix thoroughly.
  • Transfer the mixture into a greased 9x13-inch baking dish.
  • In a small bowl, mix another cup of crumbled Ritz crackers with three tablespoons of melted butter. Sprinkle this mixture over the casserole.
  • Bake for 45 minutes or until set and golden brown on top.

Notes

For added flavor, sauté onions until golden brown before mixing. You can also add sautéed mushrooms or spinach for variation and sprinkle with fresh herbs.
