For the chocolate cake

  • 1.75 cups all-purpose flour the base that gives structure to your cake.
  • 1.5 tsp baking powder for a fluffy texture.

  • 0.75 cups unsweetened cocoa powder adds rich chocolate flavor.
  • 1.25 cups granulated sugar for perfect sweetness.
  • 2 large eggs for moisture and structure.
  • 1 cup buttermilk adds creamy tang.
  • 0.5 cups vegetable oil delivers moistness.
  • 1 tsp vanilla extract enhances flavor.
  • 1 cup boiling water helps combine the batter.

For the cherry filling

  • 1.5 cups fresh or jarred cherries, pitted and halved sweet, juicy bursts of flavor.
  • 0.5 cups granulated sugar (for cherry filling) draws out juices from cherries.
  • 1 tbsp lemon juice optional, adds brightness.
  • 1 tbsp cornstarch optional, to thicken.

For the whipped cream topping

  • 2 cups heavy cream for luscious whipped cream.
  • 0.5 cups powdered sugar sweetens the whipped cream.
  • 1 tsp vanilla extract for enhancing aroma.
  • Shaved chocolate or chocolate chips (for garnish) adds elegance.
  • Extra cherries (for garnish) adds color.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, cocoa powder, and granulated sugar until evenly combined.
  • Add the eggs, buttermilk, vegetable oil, and vanilla extract into the dry mix. Blend until smooth and well incorporated.
  • Gradually pour in the boiling water while continuously mixing. This will thin down your batter.

Baking

  • Evenly distribute the batter into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted comes out clean. Allow to cool completely in pans.

Cherry Filling

  • In a medium saucepan, combine pitted cherries, granulated sugar, and lemon juice (if using). Cook over medium heat for about 5-7 minutes until cherries soften.
  • For a thicker filling, mix cornstarch with a small amount of water and stir it into the cherry mixture. Cook for another 2-3 minutes until thickened.

Whipped Cream

  • In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assembling the Cake

  • On a serving platter, place one layer of the chocolate cake. Spread a layer of cherry filling, then a layer of whipped cream. Place the second cake layer on top.
  • Frost the entire cake with remaining whipped cream and garnish with chocolate shavings and cherries.

Chilling

  • Refrigerate the assembled cake for at least 2 hours before serving.

Notes

To enhance flavor, consider adding coffee granules to the boiling water. You can freeze the cake layers separately for later use.
