Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced potatoes and chopped onion to the skillet; cook until they are crispy and golden brown, about 10-15 minutes.

Cooking

  • Push the cooked potatoes to one side of the skillet, creating space for the meat. Add the ground beef to the other side and cook until browned.
  • Once the beef is browned, mix it with the potatoes. Incorporate the chili beans and season with salt and pepper to taste.
  • Reduce heat to low and sprinkle cheese over the top. Cover the skillet until the cheese is melted.
  • Serve hot with optional toppings.
