For the cheesecake filling

  • 4 oz 4 oz cream cheese, softened The base of our cheesecake filling.
  • 0.25 cups 1/4 cup powdered sugar Sweetens the creamy filling.
  • 0.5 tsp 1/2 tsp vanilla extract (for the cheesecake filling) For that extra flavor boost.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until fully combined.
  • Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • Stir in the chocolate chips gently.
  • In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract for the cheesecake filling until smooth.

Assembly and Baking

  • Take a tablespoon of cookie dough, flatten it, and place about 1 teaspoon of cheesecake filling in the center. Top with another tablespoon of dough and seal it.
  • Place the cookie dough balls on the prepared baking sheet, spacing about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden.
  • Allow the cookies to rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, let butter sit at room temperature before creaming and ensure the cream cheese is also at room temperature for a smooth filling. Add a pinch of cinnamon for extra flavor if desired.
