Preparation

  • Gather your ingredients and a large mixing bowl.
  • Cream together the softened butter, brown sugar, and granulated sugar in the mixing bowl until smooth and fluffy.
  • Stir in the vanilla extract until blended.
  • Gradually incorporate the all-purpose flour and salt, mixing until combined.
  • Fold in the mini chocolate chips evenly.
  • Press half of the cookie dough mixture into the bottom of a greased 9×9-inch baking dish.
  • Spread the softened vanilla ice cream over the cookie dough layer.
  • Crumble the remaining cookie dough on top of the ice cream layer and press it down lightly.
  • Freeze for at least 4 hours, or until firm.
  • Melt the reserved chocolate chips and drizzle over the top.
  • Cut into bars and serve straight from the freezer.

For best results, measure ingredients accurately and ensure butter and ice cream are softened enough. Common mistakes include not softening butter sufficiently, leading to a dense texture.
