Preparation

  • Break the dark chocolate into small pieces and melt it with the butter using a double boiler or microwave.
  • In a bowl, whisk the egg yolks and sugar together until pale and creamy, then stir in the vanilla extract.
  • Fold the melted chocolate and butter into the egg yolk mixture gently.
  • In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  • Carefully fold the beaten egg whites into the chocolate mixture a little at a time.

Chilling

  • Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

Notes

Ensure mixing bowls and utensils are clean and grease-free when whipping egg whites. For a unique twist, fold in a tablespoon of strong coffee or espresso. Adding a pinch of sea salt on top enhances the flavors. Allowing the mousse to set thoroughly is essential for ideal texture and taste.
