Instructions
 

Baking the Cake

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine all dry ingredients: flour, cocoa powder, baking powder, baking soda, and sugar.
  • Add wet ingredients: milk, melted butter, eggs, and vanilla extract. Mix until fully combined.
  • Pour the batter into a greased baking pan.
  • Bake for 20-25 minutes or until a toothpick comes out clean. Allow the cake to cool completely.

Making the Raspberry Mousse

  • In a blender, combine raspberries, sugar, and lemon juice. Blend until smooth.
  • Strain the mixture through a fine sieve to remove seeds.
  • Dissolve gelatin in water, then stir it into the raspberry puree.
  • Whip the heavy cream until soft peaks form, then fold into the raspberry mixture.

Assembling the Cake

  • Spread the raspberry mousse over the cooled chocolate cake evenly.
  • Cover and refrigerate for at least 2 hours to allow the mousse to set.

Preparing the Ganache

  • Heat heavy cream until it just begins to boil. Pour over chocolate chips and stir until smooth.
  • Pour the ganache over the set mousse layer and chill for another hour before slicing.

Notes

Let the cake cool completely before layering. Ensure gelatin is fully dissolved for the mousse to set properly.
