For the cake

  • 1.5 cups all-purpose flour for the cake's structure
  • 0.5 cups cocoa powder adding rich chocolate flavor
  • 1 tsp baking soda helps the cake rise
  • 0.5 tsp salt elevates the flavors
  • 0.5 cups unsalted butter, softened for a moist texture
  • 1 cups sugar sweetness that balances the cocoa
  • 2 pieces eggs adds richness
  • 1 cups buttermilk moistens and adds tang
  • 1 tsp vanilla extract enhances the chocolate flavor

For the raspberry filling

  • 1.5 cups fresh raspberries for a burst of freshness
  • 0.25 cups sugar to sweeten the filling
  • 1 tbsp lemon juice brightens the raspberry flavor

For the ganache

  • 1.5 cups dark chocolate chips the star of your ganache
  • 0.75 cups heavy cream creates that silky ganache
  • 2 tbsp butter adds shine and richness to the ganache

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line two 8-inch cake pans with parchment paper.
  • In a medium bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt.
  • In a separate bowl, beat together the softened butter and sugar until light and fluffy. Add the eggs, buttermilk, and vanilla extract, mixing well until fully incorporated.
  • Combine the wet and dry ingredients, stirring just until mixed.
  • Divide the batter evenly between the prepared cake pans.

Baking

  • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely in the pans on a wire rack.

Making the Filling

  • In a saucepan over medium heat, combine the fresh raspberries, 1/4 cup sugar, and lemon juice. Simmer until thickened, approximately 10–15 minutes. Remove from heat and let cool.

Making the Ganache

  • Heat the heavy cream in a small saucepan until just simmering. Pour the hot cream over the dark chocolate chips in a mixing bowl.
  • Allow it to sit for a minute, then stir until the chocolate is completely melted and smooth. Add the butter, mixing until glossy.

Assembling the Cake

  • Once the cakes have cooled, remove them from the pans. Spread a layer of the cooled raspberry filling between the layers.
  • Pour the rich ganache over the top of the cake, letting it drip down the sides.

Chilling

  • Chill the completed cake in the refrigerator for at least an hour before serving.

Notes

For the richest flavor, use high-quality dark chocolate chips for your ganache. To make the raspberry filling smoother, blend the mixture after it cools. Decorate with fresh raspberries or chocolate shavings for a lovely presentation.
