  • 1/2 cup raspberry jam Provides a lovely sweet-tart contrast to the chocolate.
  • 1/2 teaspoon vanilla extract Elevates all the flavors, offering a warm aroma.
  • 2 tablespoons unsalted butter Lends a touch of creaminess to our ganache.
  • 1 cup fresh raspberries Plump and juicy, they are a delightful garnish and addition.
  • 1 tablespoon powdered sugar (for dusting) A light sprinkle of sweetness to finish our cake beautifully.
  • 1/4 cup water Used to prepare the cake mix.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • Prepare the chocolate cake mix according to the instructions on the box, adding water, eggs, and oil as directed.
  • Pour the chocolate batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center reveals a clean, crumb-free finish.
  • Once baked, let the cakes cool in their pans for 10 minutes, then transfer them to a wire rack to cool completely.

Ganache Preparation

  • In a small saucepan, bring the heavy cream to a simmer over medium heat.
  • Pour the hot cream over the chocolate chips in a heatproof bowl and let it sit undisturbed for 5 minutes.
  • Stir until the chocolate is melted and smooth. Add the unsalted butter and vanilla extract and mix until fully combined.

Assembly

  • On the first layer of your completely cooled chocolate cake, spread a thin layer of raspberry jam and top with fresh raspberries.
  • Place the second layer of cake on top and pour the ganache over the cake, allowing it to drip down the sides.
  • Finish with additional fresh raspberries and a dusting of powdered sugar.
  • Let the ganache set for about 10 minutes before slicing and serving.

Notes

For a quicker version, use pre-made chocolate cake mixes and store-bought raspberry jam. Ensure pans are well-greased and floured for easy release.
