Ingredients
  

For the Macarons

  • 1.5 cups powdered sugar Provides sweetness
  • 1 cup almond flour Adds nutty depth
  • 3 large egg whites Fresh for best results
  • 0.25 cup granulated sugar To stabilize the meringue
  • 0.25 cup unsweetened cocoa powder Rich chocolate flavor
  • a pinch salt Enhances flavor
  • 1 tsp strawberry extract Use extract or flavoring
  • pink food coloring Optional for color

For the Ganache

  • 6 oz white chocolate, chopped For a creamy filling
  • 0.25 cup heavy cream Heated to simmer
  • 2 tbsp strawberry puree Fresh or frozen for added flavor
  • 1 tsp strawberry extract Optional for enhancing the flavor

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper or silicone mats.
  • In a food processor, combine the powdered sugar and almond flour. Pulse until fine, then sift to remove lumps.
  • In a clean mixing bowl, beat egg whites with a pinch of salt. Gradually increase speed until soft peaks form, then add granulated sugar and beat until stiff peaks develop.
  • Gently fold almond flour mixture into the meringue in batches. Add cocoa powder and strawberry extract until well combined.
  • Pipe small circles, about 1.5 inches in diameter, onto the prepared baking sheets, leaving space between each. Let rest at room temperature for 30 minutes.

Baking

  • Bake the macarons for 15-18 minutes until firm to the touch. Allow to cool completely before removing.

Ganache Preparation

  • Heat heavy cream until it simmers, then pour it over the chopped white chocolate. Let sit for a couple of minutes to melt, then stir until smooth. Mix in strawberry puree and optional food coloring.

Assembly

  • Once cooled, carefully remove the macaron shells. Spread ganache on the flat side of one shell and sandwich with another. Repeat for all pairs.
  • Refrigerate assembled macarons for 24 hours for optimal flavor and texture.

Notes

Ensure all equipment is clean and free of grease. Aging egg whites for 24 hours helps achieve stable meringue. Use a kitchen scale for accurate measurements.
