Preparation

  • Begin by liberally seasoning the chuck roast with salt and black pepper, ensuring every inch is coated for optimal flavor.
  • In a large skillet, heat the olive oil over medium-high heat. Carefully place the roast in the pan and sear it on all sides until it’s beautifully browned.
  • In your slow cooker, layer the carrots, potatoes, chopped onion, and minced garlic.
  • Place the beautifully seared roast right on top of the prepared vegetables.
  • In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Pour this mixture over the roast and vegetables.
  • Nestle the bay leaves into the liquid for added flavor.
  • Cover and set your slow cooker on low for 8–9 hours, or high for 4–5 hours, until the roast is fork-tender.
  • Once cooked, remember to remove the bay leaves before serving.

Notes

For enhanced flavor, consider marinating the roast overnight with the seasonings. Feel free to add other vegetables like mushrooms or parsnips for variety. Searing adds a deeper flavor, but you can skip it if you're in a hurry. For a thicker gravy, remove the roast once cooked and whisk in a cornstarch slurry to the broth before serving.
