Preparation

  • In a mixing bowl, combine cottage cheese, all-purpose flour, baking powder, and salt.
  • Drizzle in olive oil and mix until combined.
  • Gradually pour in warm water and mix until a dough starts to form.
  • Transfer the dough to a lightly floured countertop and knead for about 5 to 7 minutes until smooth and silky.
  • Divide the dough into small portions and roll each into a flat circle about ΒΌ inch thick.

Cooking

  • Heat a non-stick pan over medium heat.
  • Cook each flatbread for 2-3 minutes on each side until golden and slightly puffed.
  • Optionally, sprinkle fresh herbs on top just before serving.

Notes

Allowing the dough to rest can enhance the texture and flavor. Store flatbreads in an airtight container for up to 2 days.
