Instructions
 

Preparation

  • In a large pot, heat the tablespoon of olive oil over medium heat. The moment the oil begins to shimmer, you know it’s ready.
  • Add the diced onion, minced garlic, chopped celery, and carrot to the pot. Stir the mixture gently, cooking until the vegetables soften, about 5-7 minutes.
  • Stir in the tomato paste, Old Bay seasoning, paprika, cayenne pepper, and season with salt and pepper. Continue to cook for another minute.

Cooking

  • Pour the seafood stock into the pot and bring everything to a gentle simmer. Allow it to simmer for about 10 minutes.
  • Add the tender crab meat and shrimp, cooking for an additional 5-7 minutes.
  • Reduce the heat, and stir in the heavy cream and butter. Cook until everything is merged into a smooth, luscious concoction.
  • If you desire a smoother texture, use an immersion blender to puree the bisque to your preferred consistency.

Serving

  • Serve hot, garnished with fresh herbs or a drizzle of cream if desired.

Notes

For a healthier alternative, substitute half of the heavy cream with coconut milk. You can also use low-sodium seafood stock for a lighter version. Don’t overcook the shrimp to avoid rubberiness, and take time to sauté vegetables thoroughly for the best flavor.
