  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup Enhances sweetness.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pierce the sweet potatoes with a fork and bake for 45-50 minutes until soft.

Filling Preparation

  • In a skillet, melt the butter over medium heat. Add the diced apple, cranberries, nutmeg, cinnamon, and salt; cook for 5-7 minutes until the apples soften and cranberries start to pop.
  • Stir in the maple syrup and cook for another 2 minutes.

Assembly

  • Scoop out the sweet potato flesh, mix it with half of the filling, and spoon it back into the skins.
  • Top with the remaining filling and bake for an additional 10-12 minutes.

Notes

Consider adding crushed nuts on top for extra crunch or goat cheese for creaminess. These sweet potatoes store well in the refrigerator for up to 3-4 days in an airtight container. For meal prep, freeze before the second bake, then thaw and reheat.
