For the Sweet Potatoes

  • 2 medium sweet potatoes Pricked with a fork for baking.

For the Filling

  • 1 small apple, peeled and finely diced Honeycrisp or Granny Smith works great.
  • cup dried cranberries Can substitute fresh cranberries with added sugar.
  • 2 tbsp butter or coconut oil Use coconut oil for a dairy-free option.
  • 1 tbsp maple syrup or brown sugar Optional for extra sweetness.
  • ¼ tsp cinnamon
  • tsp nutmeg
  • a pinch salt To elevate the flavors.

  • to taste chopped pecans Provides crunch.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Prick the sweet potatoes with a fork and place them on a foil-lined baking tray.
  • Bake the sweet potatoes for 45–50 minutes, or until they are incredibly tender. Let them cool slightly before handling.

Filling Preparation

  • Slice each sweet potato in half lengthwise and scoop out most of the flesh, leaving a thin border to maintain their shape.
  • In a bowl, mash the sweet potato flesh until smooth and creamy.
  • To the mashed sweet potato, add butter or coconut oil, maple syrup or brown sugar, cinnamon, nutmeg, diced apples, dried cranberries, and a pinch of salt. Mix until well combined.

Baking

  • Spoon the mixture back into the sweet potato skins, generously filling them.
  • Place them on a baking sheet and bake for an additional 10–15 minutes until heated through and slightly golden.
  • Garnish with chopped pecans, cranberries, or a sprinkle of feta cheese before serving.

Notes

This dish pairs well with grilled meats and can also be served with vanilla ice cream. Avoid overbaking sweet potatoes to preserve their sweetness.
