Instructions
 

Prepare the Cupcakes

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in orange zest and vanilla extract.
  • In another bowl, combine orange juice and buttermilk.
  • Gradually add dry mixture into the butter mixture, alternating with buttermilk mixture until just combined.
  • Fold in chopped cranberries and white chocolate chips.
  • Spoon batter into liners, filling each about two-thirds full.
  • Bake for 18-20 minutes, until a toothpick comes out clean.
  • Let cool completely on a wire rack.

Optional Frosting
