Instructions
 

Cooking the Soup

  • In a large pot, cook the ground turkey sausage over medium heat until it’s browned. Use a spatula to break the meat apart as it cooks. Once browned, drain any excess fat.
  • Add the chopped onion and minced garlic to the pot. Sauté for a few minutes until the onion becomes soft and fragrant.
  • Pour in the chicken broth and bring the mixture to a gentle simmer.
  • Add the crushed tomatoes, broken lasagna noodles, dried basil, oregano, red pepper flakes (if using), salt, and pepper. Stir to combine everything, allowing it to cook for about 10-12 minutes until the noodles are tender.
  • Mix in the heavy cream, ricotta, Parmesan, and mozzarella cheeses. Stir until the cheese has melted into the soup.
  • Taste the soup and adjust seasoning with extra salt, pepper, or red pepper flakes as desired.
  • Ladle the soup into bowls and garnish with fresh, chopped parsley.

Notes

Leftovers may be stored in an airtight container in the refrigerator for up to three days. For an enhanced flavor, consider making it a day ahead of time.
