  • 4 to 4.5 cups cauliflower florets, crisp and wholesome

Sauce Ingredients

  • 1/3 cup unsalted butter, divided for richness
  • 1/3 cup all-purpose flour, for a delightful thickening agent
  • 2 cups whole milk, adding creaminess to the sauce
  • 1 teaspoon garlic powder, for a hint of aromatic flavor
  • 3/4 teaspoon salt, or to taste, enhancing all flavors
  • 1/2 teaspoon onion powder, bringing depth to the dish
  • 1/2 teaspoon freshly ground black pepper, for a touch of spice
  • 1/4 teaspoon ground nutmeg, adding warmth and aroma
  • 6 ounces shredded mixed cheese (mozzarella, provolone, Parmesan, Asiago, cheddar), for that cheesy goodness
  • 2 to 3 tablespoons unseasoned panko bread crumbs, adding a crunchy topping
  • Chopped chives or green onion, for optional garnish that adds color and freshness

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Steam the broccoli and cauliflower florets in a steamer basket over boiling water for about 6-8 minutes until tender-crisp.

Sauce Making

  • In a medium saucepan over medium heat, melt 1/4 cup of butter. Whisk in the flour and cook for 1-2 minutes until slightly golden.
  • Gradually pour in the whole milk, continuously whisking until the sauce thickens.
  • Stir in the garlic powder, salt, onion powder, black pepper, and ground nutmeg. Remove from heat once fully combined.
  • Add 1/2 cup of your mixed cheese to the sauce, stirring until melted and creamy.

Assembly and Baking

  • Gently fold the steamed florets into the cheese sauce until well-coated, then transfer the mixture to a greased baking dish.
  • Sprinkle the remaining cheese and panko breadcrumbs over the top.
  • Place the dish in the preheated oven and bake for 35-40 minutes, or until bubbly and golden brown.

Serving

  • Garnish with chopped chives or green onion if desired before serving.

Notes

Consider adding cooked chicken or ham for extra protein. Experiment with different cheeses like Fontina or Gouda. For a healthier version, use plant-based milk or whole wheat flour.
