  • 2 tablespoons butter creamy and indulgent, adding depth to the sauce
  • 2 cloves garlic, minced aromatic and flavorful, infusing the air with delicious scent
  • 1 cup fresh spinach, chopped vibrant green and nutrient-rich, giving freshness and a slight earthiness
  • 1/2 cup roasted red peppers, jarred or homemade, chopped sweet and smoky, adding a burst of color and flavor
  • 1/2 cup heavy cream luxuriously creamy, transforming the mixture into a dreamy sauce
  • 1/4 cup grated Parmesan cheese salty and nutty, enhancing the creaminess of the sauce
  • 1 teaspoon lemon juice fresh and zesty, brightening up the dish perfectly

Instructions
 

Preparation

  • Begin by preheating your oven to 400°F (200°C).
  • Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  • Season the salmon fillets lightly with salt and pepper. Once the oil is hot, place the fillets skin-side down and cook undisturbed for about 4-5 minutes until the skin is golden and crispy.
  • Carefully flip the salmon and cook for another few minutes. Remove the fillets from the skillet and set aside.

Cooking

  • In the same skillet, lower the heat slightly and add 2 tablespoons of butter. Let it melt.
  • Introduce 2 cloves of minced garlic and sauté for about a minute until fragrant.
  • Add the chopped spinach and stir to combine. Cook until the spinach wilts, about 2-3 minutes.
  • Fold in the chopped roasted red peppers. Pour in 1/2 cup of heavy cream and 1/4 cup of grated Parmesan cheese, allowing it to simmer for about 2-3 minutes until thick.
  • Add 1 teaspoon of lemon juice and taste the sauce. Adjust seasoning as needed.
  • Return the salmon fillets to the skillet and place it in the oven, cooking for an additional 5-7 minutes until flaky.

Serving

  • Remove the skillet from the oven and garnish with freshly chopped parsley.
  • Serve alongside jasmine rice, mashed potatoes, roasted asparagus, or a mixed greens salad.

Notes

Use fresh, high-quality salmon for the best flavor. Consider adding artichoke hearts or sun-dried tomatoes for variation. If using frozen spinach, thaw and squeeze out excess water before use.
