For the tortellini

Preparation

  • Puree the Tomatoes: Start by taking 14 ounces of the diced tomatoes and blending them in a food processor until smooth.
  • Heat the Sauce: In a medium skillet over medium heat, combine the pureed tomatoes, minced garlic, and heavy cream. Bring this mixture to a boil, stirring frequently.
  • Simmer to Thicken: Reduce the heat to low and let the sauce simmer, stirring occasionally until slightly thickened.

Cooking

  • Add Greens and Cheese: Increase the heat back to medium. Stir in the fresh spinach, basil, Parmesan cheese, dried oregano, tortellini, and the remaining diced tomatoes along with their juices. Continue stirring until the spinach wilts.
  • Cook the Tortellini: Pour in the vegetable broth, ensuring it covers the tortellini adequately. Cook until the tortellini are warmed through, approximately 5 to 8 minutes.
