  • 1/2 teaspoon 1/2 teaspoon salt Enhances flavors.

  • 1/4 cup 1/4 cup fresh parsley, chopped (for garnish) Adds freshness and color.

Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  • Season the salmon fillets generously with salt and black pepper on both sides.
  • Gently place the salmon fillets skin-side down into the skillet and cook for 3-4 minutes on each side until golden and cooked through, then remove and set aside.

Cooking the Sauce

  • In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add chopped spinach and sun-dried tomatoes, and sauté for another 2-3 minutes until spinach wilts.
  • Pour in heavy cream and vegetable or seafood broth, stirring gently to combine.
  • Season with dried oregano, red pepper flakes, salt, and pepper, and let it simmer for about 5 minutes to thicken slightly.

Final Assembly

  • Return the cooked salmon to the skillet and spoon the creamy sauce over it. Simmer for an additional 2-3 minutes.
  • Garnish with freshly chopped parsley and serve hot.

Notes

For extra flavor, marinate the salmon before cooking. Substitute half of the heavy cream for milk for a lighter sauce. Prepare ingredients ahead of time to save cooking time.
