Ingredients
  

For the salmon bites

  • 1.5 pounds fresh salmon fillets, skin removed and cut into bite-sized pieces
  • 1 tablespoon high-quality olive oil
  • 1 teaspoon garlic powder aromatic
  • 1 teaspoon onion powder fragrant
  • 1 teaspoon smoky paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon freshly cracked black pepper
  • 0.25 teaspoon cayenne pepper optional, for an extra kick

For the Bang Bang sauce

  • 0.5 cup creamy mayonnaise
  • 0.25 cup sweet Thai chili sauce
  • 1 tablespoon sriracha sauce adjust for preferred heat level
  • 1 tablespoon natural honey
  • 1 tablespoon freshly squeezed lime juice

For garnish

  • Fresh parsley or cilantro, chopped
  • Sliced green onions
  • Sesame seeds optional, for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • In a medium-sized bowl, combine the salmon pieces with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper if desired. Toss the ingredients to coat each salmon piece evenly.
  • Arrange the seasoned salmon pieces in a single layer on the prepared baking sheet, ensuring they have ample space.

Cooking

  • Bake in the preheated oven for 10-12 minutes until the salmon is cooked through and crispy.
  • While waiting for the salmon bites, prepare the Bang Bang sauce by whisking together the mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth.
  • Once the salmon bites are cooked, transfer them to a large mixing bowl.
  • Pour the Bang Bang sauce over the salmon bites and gently toss to coat.

Serving

  • Garnish with parsley or cilantro, sliced green onions, and sesame seeds if desired.
  • Serve immediately and enjoy!

Notes

For extra crunch, let salmon pieces sit in the coating mixture for 10-15 minutes before baking. Substitute mayonnaise with Greek yogurt for a healthier option.
