Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet by greasing it lightly with butter.
  • Bring a large pot of salted water to a rolling boil; add potato cubes and cook for 10-12 minutes until fork-tender. Drain and return to pot.
  • In a small pan, melt the butter over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.

Mixing

  • Pour the garlic butter over the cooked potatoes and mash until smooth. Stir in cheddar cheese, parmesan, parsley, salt, and pepper.

Baking

  • Shape the potato mixture into balls, about 1-2 inches in diameter, and place them on the prepared baking sheet.
  • Bake for 15-20 minutes until golden brown and crispy.

Serving

Notes

For best results, allow the mashed potatoes to rest before shaping. Avoid overcrowding the baking sheet for even cooking. You can make these in advance and reheat when ready.
