  • 500 grams potatoes, peeled and cubed For a tender, fluffy texture.
  • 1 teaspoon salt For boiling, enhances the taste.
  • 1/3 cup fresh grated Parmesan cheese Adds rich, cheesy flavor.
  • 1/4 teaspoon fresh ground black pepper For a hint of spice.
  • 4 tablespoons potato starch Provides binding and crispiness.
  • 1 tablespoon potato starch (for dusting) Ensures extra crunch.

  • 1/4 cup fresh parsley, chopped For color and freshness.

Instructions
 

Preparation and Cooking

  • Boil potato cubes in salted water until fork-tender, about 10-15 minutes.
  • Drain potatoes and mash until smooth, preferably using a ricer.
  • In a bowl, mix mashed potatoes with black pepper, chopped parsley, grated Parmesan, and 4 tablespoons of potato starch until well combined.
  • Divide mixture into two portions, roll into dough balls, dust work surface with potato starch, roll out into 1/2-inch thick rectangles, and cut into strips.
  • Heat oil in a fryer or large pan over medium heat, and fry potato strips until golden brown and crispy, about 5-7 minutes per batch.
  • Drain fries on a wire rack over paper towels to absorb excess oil.
  • Serve hot, optionally with additional grated Parmesan on top.

Notes

Double frying for extra crispiness is recommended. You can also prepare the potato mixture a day ahead and store in the fridge before frying.
