Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners to prevent sticking.
  • Grate the zucchini and potato, then squeeze out excess moisture using a kitchen towel.

Mixing

  • In a large bowl, whisk together the eggs, milk, and olive oil until well combined.
  • Add the grated zucchini and potato, along with the flour, Parmesan cheese, garlic powder, onion powder, baking powder, salt, and pepper to the bowl. Stir gently until just combined.

Baking

  • Spoon the mixture into the muffin tin, filling each cup about 3/4 full. Sprinkle breadcrumbs on top.
  • Bake for 20-25 minutes until golden brown and a toothpick comes out clean when inserted in the center.
  • Let the muffins cool for a few minutes, garnish with parsley if desired, and serve warm.

Notes

For an even more intense flavor, consider adding additional herbs like thyme or basil. You can swap out the Parmesan for another cheese like sharp cheddar. Leftover muffins can be chopped and added to salads.
