Ingredients

Main Ingredients

  • 1.5 to 2 lbs chicken breast or thighs Tender, juicy chicken forms the backbone of your pot pie.
  • 2 cups frozen mixed vegetables A colorful medley of carrots, peas, and corn adds flavor and nutrition.
  • 1 can (10.5 oz) condensed cream of chicken soup This provides a rich, creamy base that binds all the flavors together.
  • 1 cup milk Adds creaminess and helps achieve the right consistency in your filling.

Biscuit Topping Ingredients

  • 2 cups Bisquick or biscuit mix The key to fluffy, golden topping.
  • 1/2 cup butter For richness, combined with Bisquick for irresistible biscuit topping.
  • 2-3 tablespoons milk Optional, to adjust biscuit dough consistency.

Seasonings

  • 1 teaspoon salt Essential for bringing out the flavors.
  • 1/2 teaspoon black pepper A pinch for subtle heat.
  • 1/2 teaspoon garlic powder For an aromatic touch.
  • 1/2 teaspoon thyme A classic herb that complements the chicken delightfully.

Instructions

Preparation

  • Start by cutting the chicken into bite-sized pieces and gathering your frozen mixed vegetables.

Mixing the Base

  • In your slow cooker, combine the cut chicken, mixed vegetables, condensed cream of chicken soup, and milk.
  • Season the mixture with salt, black pepper, garlic powder, and thyme. Stir gently to combine all the flavors harmoniously.

Slow Cooking the Filling

  • Cover the slow cooker and cook on low heat for 5 to 6 hours.

Preparing the Biscuit Topping

  • In a separate bowl, mix the Bisquick with melted butter. If the mixture appears too dry, add a bit of milk until you form a soft dough.

Adding Biscuit Dough

  • Once the filling is done cooking, drop spoonfuls of the biscuit mixture over the filling.
  • It’s okay if it’s not even – it will spread and puff up beautifully.

Final Cooking

  • Cover the slow cooker again and cook for an additional 30 to 45 minutes until the topping turns golden and fluffy.

Serving

  • Serve hot, garnished with fresh parsley or thyme for a touch of color and flavor.

Notes

Consider sautéing some onions and garlic for more flavor. Feel free to use fresh vegetables or other herbs like rosemary or sage. For a cheesy biscuit topping, add shredded cheese, and for a kick, toss in cayenne pepper.
