  • 1 head Chinese cabbage, shredded
  • 1 large Cucumber, thinly sliced
  • to taste pinch Salt
  • 1 medium Sweet red pepper, sliced
  • 2 tablespoons Olive oil for cooking
  • 1 medium Onion, finely chopped
  • 1 small spoon Sugar
  • 2 stalks Green onion, chopped
  • 3 tablespoons Thick yogurt
  • 1 small spoon Dried tomatoes, chopped
  • 1 small spoon Italian herbs
  • 2 tablespoons Mustard seeds
  • 2 tablespoons Apple cider vinegar
  • 1 clove Garlic, minced

Instructions
 

Preparation

  • In a large bowl, combine the shredded Chinese cabbage with the thinly sliced cucumber.
  • Sprinkle with salt to taste and let it sit for about ten minutes.
  • In a small pan, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
  • Add the sweet red pepper slices and cook for an additional 2-3 minutes until slightly softened.
  • In a separate bowl, whisk together the thick yogurt, sugar, dried tomatoes, Italian herbs, mustard seeds, apple cider vinegar, and minced garlic.
  • Pour the yogurt mixture over the cabbage and cucumber mixture. Incorporate the sautéed onion and red pepper, tossing everything together until well combined.
  • Garnish with chopped green onion before serving.

Notes

Consider adding toppings like sunflower seeds or sesame seeds for extra crunch. Adjust seasoning as needed for taste.
