  • 4 large large baking potatoes Perfectly fluffy and substantial
  • 1 pound lean ground beef Rich in protein and flavor
  • 1 small onion, chopped For added sweetness and aroma
  • 1 packet taco seasoning Bursting with spice
  • 1/4 cup water To elevate the flavors
  • 1/2 cup sour cream Creamy and tangy
  • 1/4 cup milk For smoothness
  • 1 cup shredded cheddar cheese Melty and savory
  • 2 pieces green onions, sliced For a fresh crunch
  • 1/2 cup salsa For a zesty kick

Preparation

  • Preheat your oven to 475°F (245°C).
  • Scrub the potatoes thoroughly under running water to remove any dirt, and then prick them several times with a fork.
  • Bake the potatoes directly on the oven rack for 60 to 75 minutes or until they are soft and easily pierced with a fork.

Cooking the Filling

  • While the potatoes are baking, heat a nonstick pan over medium-high heat. Add in the ground beef and chopped onion, cooking until the beef is browned and cooked through.
  • Once the beef is cooked, sprinkle in the taco seasoning and pour in 1/4 cup of water. Stir and cook for about 1 minute, then remove from heat.

Assembly

  • After the potatoes have baked, allow them to cool for 10-15 minutes. Carefully remove a sliver of skin from the top of each potato and scoop out the fluffy potato pulp into a large mixing bowl.
  • To the potato pulp, add sour cream and milk. Mash until smooth and creamy.
  • Stir in about three-quarters of the taco mixture, reserving the remainder. Gently fold in three-quarters of the shredded cheddar cheese.
  • Scoop the mashed mixture back into the potato skins and place in a baking dish. Sprinkle the remaining cheese on top.
  • Return the dish to the oven, baking for another 20-25 minutes at 350°F (175°C) until the cheese is bubbly and golden brown.

Serving

  • Serve hot, garnished with sliced green onions, a spoonful of salsa, and additional sour cream.

Notes

For a healthier alternative, consider using sweet potatoes. You can also add black beans or jalapeños for added flavor.
