  • 2 medium aubergines (eggplants) Choose fresh, glossy eggplants.
  • 2 tbsp miso paste This fermented soybean paste brings rich umami flavor.
  • 1 tbsp olive oil Adds richness and helps the glaze stick.
  • 1 tbsp maple syrup Balances the saltiness of the miso.
  • 1 tbsp soy sauce or tamari Adds a salty flavor to the glaze.

Preparation

  • Preheat the oven to 400°F (205°C).
  • Cut the aubergines in half lengthwise and slice crisscrosses in their flesh, about ½ an inch deep.

Baking

  • Place the halved aubergines on a baking sheet and bake for 20 minutes.
  • While baking, mix the miso paste, olive oil, maple syrup, and soy sauce in a bowl until smooth.
  • Remove the eggplants from the oven and brush generously with the miso glaze.
  • Return the eggplants to the oven for another 10-15 minutes until golden and soft.

Serving

  • Serve immediately while hot, enjoying the delightful flavors.

Notes

Use quality miso for best flavor. Consider adding sesame seeds or green onions on top. For a smoky flavor, grill instead of baking. This dish is meal prep-friendly and can be paired with rice, quinoa, grilled tofu, or stir-fried vegetables.
